Just thinking about Carnitas makes my mouth water. So stinkin' good, I can't even being to tell you how good it is. This is by far my favorite Mexican dish.
I fly by the seat of my pants with this one. Each time I make it, it comes out different. Amounts are all to taste. Nothing about this dish is an exact science. Add your own ingredients at will! :)
GATHER:
3- 4lb pork roast (will serve aprox. 6+ people)
3 bottles mexican beer (Dr. Pepper works as a good substitute)
1 bunch of cilantro
4 cloves of garlic, pealed and halved
1 jalapeƱo Pepper, halved & seeded
1 red onion, halved
salt & pepper, to taste
4 limes, halved
COOK:
Trim fat from roast. Season with salt and pepper. Place in slower cooker. Add garlic, jalapeno, onion to cooker. Juice limes over roast. Cover roast with cilantro. Pour beer (or other liquid of choice) over roast. Best to use enough liquid to cover the entire roast.
Cook on low for 6 hours or longer. Will be fork tender when done. Remove from cooker and let sit a few minutes. Then shred the meat with a fork. If it appears to be a little dry, add in a bit of the cooking liquid.
SERVE:
Serve with usual taco fixings or just mixed with rice and beans.
