[Recipe] Bruschetta Pasta

This is one of my favorite pasta dishes. Quick and easy to make, it works well as a simple dinner for 2, or a fancy feast for 10. Enjoy!

GATHER:
1 box thin spaghetti
2 tbs olive oil
2 tbs minced garlic
3 cups fresh tomatoes, diced
2 tbs balsamic vinegar
1/2 tsp (or more if you like) fresh basil


COOK:
Cook the pasta as usual- leaving slightly on the al dente side.

While the pasta is cooking, heat a large saute pan on medium high with olive oil. Saute garlic until golden. Add tomatoes, balsamic vinegar and basil. Heat until warmed.

Add the pasta to the tomato mixture and let simmer to marry all the flavors.


SERVE:
Serve warm with cracked pepper and sprinkled (or doused, whichever you prefer) with Parmesan cheese.
